Louisville, we survived another spicy August week—and I’m not just talking about your hot chicken. This report covers August 11th through August 17th, 2025. I sifted through the sizzle so you don’t have to. Spoiler: a couple spots turned up the wrong kind of heat and landed in the red.

Follow-ups are the comeback tour—where a place proves it fixed the mess and can safely feed the masses again. This week? No follow-up inspections on the docket. That means we don’t have fresh re-check results to confirm improvements anywhere. Two spots hit the C-list this week. Quick reminder: a C means the problems are serious—either the score dipped below 85% or there were critical violations on deck (one critical alone can do it).

- A 91 looks shiny, but those criticals are the plot twist—one critical is enough for a C, and here we’ve got three. That combo is a true “pour decision” for food safety.
- Why it matters:
- Bare-hand contact with ready-to-eat foods is a fast track for spreading illness—gloves or utensils are non-negotiable unless an approved control plan is in place.
- Cold holding at 53°F? That’s bacteria’s summer pool party. TCS foods must stay at or below 41°F.
